Pressure cooker black bean soup



Introduction

After living in Brazil for 5 years, and having black beans on our menu twice a day, 6 days a week, I decided to jazz up a soup for my family. We are back in the States now, but still crave the taste and smell of the black beans boiling on the stove.The broth is "thin", and this makes a good in-between meals snack.

For a heartier soup, when reheating, I add 1 oz. of whole grain rotini per serving and add it into my nutrition separately.

Number of Servings: 14

Ingredients

    1 cup dry black beans
    10 cups water
    3 oz tomato paste
    1 large onion, chopped
    3 cloves garlic, chopped
    1 lrg green pepper, chopped
    2 stalks celery, sliced
    1/8 cup white vinegar
    2 packets (10 grams)Knorr Sazon, onion/garlic/annatto/cilantro
    1 packet(10 grams) powered beef bouillion
    2 cups frozen, cut okra
    1 cup frozen corn
    1 tsp salt
    1/4 tsp black pepper

    1/2 cup chopped, fresh parsley(optional)

Directions

Place all ingredients in pressure cooker and let "boil" for 60 minutes.

If desired, stir in fresh parsley before serving

Makes 14 1-cup servings.
