Lentil Red Beans

Introduction

Number of Servings: 4

Ingredients

    2 tsp olive oil
    1 large onion, diced
    4 cloves of garlic minced

    1.5 cup Red Lentil, rinsed and sorted
    1 tsp cumin
    1 tsp grated fresh ginger
    2 carrots, peeled and diced
    2-3 cups of chicken stock
    salt and pepper to taste

    1.5 cups Red Kidney Beans
    1.5 cups of tomato sauce
    2 chopped fresh tomatoes
    1 tsp cumin
    1 tsp chili powder
    1 tsp adobo seasoning
    a dash of cider viengar
    a dash of hot sauce
    1/8 tsp liquid smoke
    salt and pepper to taste

Directions

Heat olive oil in a pan and saute onion and garlic until soft. Split the sauted mixuture into two pans. The first six ingredients go in one pan and the remaining go into another. Cook until the lentils are soft and beans are warmed through. Eat alone, together, or over rice or inside a pita or tortilla.
