Candied Yams



Introduction

Sweet and saucey... a Southern treat. Sweet and saucey... a Southern treat.
Number of Servings: 9

Ingredients

    2 lbs Sweet Potatoes
    1/4 cup Brown Sugar
    1/2 cup Butter
    1/2 cup Orange Juice
    1/2 tsp Cinnamon
    1 Tbsp DiSaronno Italian Liquor (optional) or...
    1 Tbsp Maple Syrup

Directions

makes 9 3/4-cup servings

* Cut sweet potatoes in half and boil 20 min.
* Let cool; peel; chop in smaller pieces; and place on baking sheet.
* Preheat oven to 250*F (121*C)
* Melt butter and combine with orange juice and liquor (or syrup)
* Pour liquid over chopped sweet potatoes
* Combine brown sugar and cinnamon
* Sprinkle mixture over sweet potatoes
* Bake approximately 40 min. until sauce is bubbly and yams are soft.

  • What part of this is a "low calorie" recipe???
    Just curious cause my regular yam recipe wasn't this high in calories and that was before I lost over 100 pounds LOL! - 1/10/09

    I never meant to represent this dish as "low calorie". I've lost over 60 lbs and I find that I can still fit foods like this into my regimen.

  • Mmmm, this is such a yummy side dish, but we even like it as a dessert. And if one covers it with marshmallows, it´s even more heavenly!!! Smashing! :) - 1/6/09
