beat 6 eggs until light
add sugar slowly, beating continuously
add 1 tbsp anise extract and .5 tbsp vanilla
fold in dry ingredients (pre-mixed or sifted) until just incorporated
Scrape into buttered or lined 9x13 or similar sized pan.
Remove from oven and let cool for 5 minutes.
With a serrated bread knife, slice cake in in half lengthwise and then into .5 inch cookies.
Return to oven for approximately 10 minutes, or until lightly browned on each side
makes 35 to 40 1 x3 inch biscotti
