Green Veggie Power Soup

Number of Servings: 4

Ingredients

    1tbsp Olive oil
    1 onion
    2 garlic cloves
    4 celery sticks
    1.5l vegetable stock
    1 courgette
    1 head of broccoli
    150g green beans
    150g green peas
    150g asparagus
    85g baby spinach leaves

Directions

Heat the oil in a large saucepan and cook the onion, garlic and celery until lightly browned.
Add the courgette and broccoli and cook for 5 mins
Pour in stock and bring to the boil.
Simmer for 5 minutes
Add beans, peas, asparagus and spinach
Simmer for 5 more minutes.
Season well with black pepper.
Allow to cool and blend.
