    * Olive Oil, Extra Virgin, 8 tbs
    * Onions, raw, 1 medium (2-1/2" dia) Chopped fine
    * Red Ripe Tomatoes, 2 Italian tomato Chopped small
    * Peppermint, fresh, 8 tbsp chop fine
    * Cucumber (with peel), 1 cucumber (8-1/4") Chopped small
    * Bulgar - Cracked Wheat, 1 cup + 1 cup boiling water


rinse bulgar then cover with boiling water and let sit for 30 minutes. Add all other ingredients then let sit in fridge overnight before eating for flavors to meld.

Next time I will use less oil....
