Quinoa Salad

Introduction

This is a beautiful salad and full of anti-oxidents! A great way to eat your veggies! This is a beautiful salad and full of anti-oxidents! A great way to eat your veggies!
Number of Servings: 10

Ingredients

    Quinoa,
    black beans
    red peppers
    tomatoes
    avocadoes
    cucumbers
    corn
    cilantro
    onions
    salt
    lime juice

Directions

Using a cheesecloth over a strainer, rinse Quinoa til water runs clear. Place Quinoa in saucepan with two cups water and a dash of salt. Boil 10-15 minutes or until Quinoa is done. Set aside to cool. Drain and rinse black beans and add to large bowl, along with all the chopped veggies. Add cooked Quinoa, lime juice and salt. Stir altogether and enjoy!
