Mulberry Pie

Introduction

This is wonderful for fresh or frozen berries. You can change out the berries or the jello flavor for a variation. I have also made this using multiple berry combinations. Always a crowd pleaser. Number of Servings: 8

Ingredients

    12 graham cracker squares (6 sheets)
    2 tbsp unsalted oleo
    1 pkg sugar free gelatin (pick your flavor)
    3/4 cup sugar
    3 tbsp corn starch
    1 1/2 cup cold water
    2 cups mulberries

Directions

Crush the graham crackers. Melt the oleo. Mix will and press into an 8 inch pie pan. Place in refrigerator.
Mix the water, sugar and corn starch in a saucepan. Bring mixture to boil and let boil while stirring for 2 minutes. Remove from heat. Add gelatin and mix well. Let sit and cool for about 20 minutes.
Remove crust from refridgerator. Add berries to crust. Top with gelatin mixture. Refridgerate until set (a couple hours). Serve as is or topped with whipped cream. Remember to soak the pan in warm water for a few seconds before trying to serve. Serves 8 slices.
