Introduction

Ingredients

    2 large bananas, mashed
    3/4 c buttermilk
    1/3 c packed light brown sugar
    2 egg whites (or one whole egg)
    2 T canola oil
    1 c rolled oats
    1 1/2 cups whole wheat pastry flour (or all-purpose)
    1 t grated nutmeg
    1 1/2 t baking powder

Directions

Preheat the oven to 375F. Spray or oil muffin tins.

In one bowl, mix the wet ingredients together. In another bowl, mix the dry ingredients. Mix wet into dry, and stir together quickly. Fill the tins 2/3 full and put a little water in the empty cups. Bake until golden brown and springy when pressed lightly with a finger, about 25 minutes. Run a knife around the edge of each tin and remove.
