French Onion Soup

Introduction

Good basic recipe.  I use a whole grain baguette and maybe a scant tablespoon of swiss cheese on my own bowl, but the recipe is as written.  Adapted from 125 Best Vegetarian Slow Cooker Recipes by Judith Finlayson. Number of Servings: 6

Ingredients

    6 large vidalia or other sweet onions, thinly sliced2 tbsp melted butter2 tsp granulated sugar1 tsp sea salt1 tsp cracked peppercorns8 cups Organic Vegetable Stock2 Tbsp cognac (optional)12 slices whole grain baguette, lightly toastedshredded Gruyere Cheese to sprinkle on top

Directions

Place onions in crockpot and mix well with melted butter. Cover and cook for 1 hour on high. Add sugar, salt and peppercorns and stir well. cover and cook on high for 4 hours, stirring a few times. Add stok and cognac and continue cooking for 2 more hours on high. Toast slices of baguette lightly. Ladle soup into bowls, top with baguette slices and shredded cheese, to taste. You may place bowls under broiler to melt the cheese further, if desired.
