Chicken Black Bean Soup

Easy dinner with protein and lowered carbs I use when workouts are done early in the day.

Ingredients

    1 bag of Frozen carrots, celery, and onion
    1 large can of diced tomatoes
    1 large carton of 99% fat free chicken broth
    1 can of black beans
    3 medium chicken breasts without skin and bone
    1 tbsp of basil
    1 tbsp of oregano
    1 tbsp of thyme
    salt and pepper to taste
    1 tsp of garlic (use more if you like garlic)
    1 tsp of cinnamon


Directions

Put all ingredients in a crockpot and cook on low for five hours or until chicken is done. I like to take a fork and shred the chicken once it is cooked. You can also serve this over rice if you are looking for more calories or more carbs. Noodles are great mixed in too.

Do you drain/rinse the black beans or put it in as is?

You can rinse them off if you want to dump some sodium. I don't but I have low BP and never worry about added sodium. It's really a preference for the sodium.
