Vegetarian Taco Filling

Introduction

This is based off of a recipe that I got off of a can of black beans and makes a vegetarian substitute for beef filling. My meat-eating family loves it! This is based off of a recipe that I got off of a can of black beans and makes a vegetarian substitute for beef filling. My meat-eating family loves it!
Number of Servings: 8

Ingredients

    2 Tbsp Olive Oil
    1 medium onion, cut into slices
    2 garlic cloves, minced
    1 14oz. can black beans
    1 14oz. can diced tomatoes
    1/2 tsp cumin powder
    2 Tbsp fresh cilantro or 1 Tbsp dry
    1 tsp cayenne (red) pepper
    1 tsp parsley (dry)
    1 tsp black peper
    1/2 tsp salt

Directions

Serving size about 1/2 cup, makes about 8 servings

1) Heat olive oil in a large pan and cook onion and garlic until soft.
2) Add drained black beans and diced tomatoes and heat until bubbling.
3) Add spices to taste, except cilantro if using fresh, and let simmer for about 5 minutes to let flavors blend.
4) Add cilantro at last minute so as to not overcook it.
5) Serve in place of meat in tacos. My favorite is whole wheat tortillas, light sour cream, lettuce, and light cheese. Enjoy!
