Simple Lentil Soup w/ Mashed Sweet Potatoes

Introduction

I finally came up with a delicious lentil soup. Added mashed sweet potatoes gives a pleasant taste. I finally came up with a delicious lentil soup. Added mashed sweet potatoes gives a pleasant taste.
Number of Servings: 6

Ingredients

    1 cup Dry Lentils
    6-8 cups water (or 2 cups broth and 4-6 cups of water)
    2 Sweet Potatoes, peeled and cubed
    1 Carrot, peeled and sliced
    1 Celery Stalk, chopped
    2 cloves of garlic
    Salt and Pepper to taste (about 1 tsp of each)

Directions

1.) Rinse Lentils in cold water several times before adding them to a cooking pot. In a medium size cooking pot, boil 4 cups of water. Add lentils and boil for about 30 minutes.


2.) Cook sweet potatoes in a seperate pot with water until until tender. When they are cooked, mash them, and set aside.


3.) In a skillet, add a small amount of oil (oil or vegetable) and saute onions until tender and slightly see through. Add prepared celery, carrots and 2 cups of water (or broth) to skillet. Reduce heat to low and simmer for 5 minutes.


4.) Add onion mixture in skillet to the pot of cooking lentils. Simmer the pot, covered, for about 30 minutes or until the lentils are soft.


5.) You may need to check from time to time as the water tends to disappear pretty quickly durring this stage. Add salt and pepper and simmer another 15 minutes.


6.) Add the mashed sweet potatoes to the pot. Mix well and just bring to boil. Adjust seasonings to taste and serve.



Great served as left overs too!
