2 tsp. olive oil
1 large onion, chopped
1 clove garlic, minced
1-1/2 tsp. curry powder
2 c. water
2 med. new potatoes, cut in 1" pieces
1 c. dried yellow split peas (8 oz)
2 c. baby spinach
2. Add water, potatoes and split peas; bring to boiling. Reduce heat and simmer, covered, 25-30 minutes until potatoes and split peas are tender. Remove from heat; stir in spinach just until wilted.
