Mel's Creamy Chicken Lasagna

Introduction

This is a favorite of friends and family! My husband does not like spinach, so I usually make half of the pan with spinach and half without. it is very filling and it makes great left overs for lunches because it heats up well (it is also freezable) This is a favorite of friends and family! Ingredients

    Boneless skinless chicken breast-cooked and chopped into small bite-sized pieces
    2 cans of low fat cream of mushroom soup (3 cups)
    2 cans of low fat cream of chicken soup (3 cups)
    0ne 16 oz carton of low fat sour cream
    1 pound (about 3 cups) of sliced mushrooms (I use baby bellas)
    1 10oz box of frozen chopped spinach-thawed and liquid squeezed out
    1 box of no boil lasagne noodles (Barilla)
    12 oz shredded low fat cheddar cheese
    1 tablespoon of EVOO




Directions

Makes 12 servings

Add the EVOO to the sliced mushrooms and saute in the microwave for 5 minutes

In a large bowl, combine the soups, diced chicken, sour cream, and sauted mushrooms, mix well.

Layer as follows in an 11x14 baking dish:
sauce mixture (1/3 of bowl)
lasagna noodles (fully cover sauce mixture)
shredded cheese (1/3 of bag)
spinach (1/2 of box)

REPEAT ABOVE LAYERS

Top with one last layer of sauce mixture and remaining cheese.

Bake at 350 degrees for 50 minutes or until cheese is lightly browned.
