Dr Weils Tofu and Vegetable Stir fry

Ingredients

    1# firm tofu
    8c sliced vegetables (use a rainbow -
    onions,carrots,peppers,mushrooms,
    celery,broccoli,asparagus,mungbean
    sprouts,bamboo shoots)
    1T olive oil
    2c cooked brown rice

    Sauce:
    1/4c dry sherry
    1/4c low salt soy sauce
    2 cloves garlic pressed
    2T light brown sugar
    1T chopped ginger root
    1t toasted sesame oil
    1t corn starch

Directions

4 servings

slice tofu into 1/2 inch slices. Press between paper towels to dry. Cut slices into 1inch cubes. Prepare vegetables but seperated by variety.

Combine sauce ingredients except for corn starch. Stir until sugar dissolves. Mix corn starch with 2t water. Add to sauce, stir and set aside.

Preheat skillet. Add oil and vegetables. Make sure to add more tender ones later. Cook over medium high heat until crisp and tender. Stir constantly.

Add tofu and stir carefully until tofu heated. Stir sauce and pour around edges. Stir and remove when sauce heated. Serve over cooked rice.
