Tomato-Basil Pasta

Number of Servings: 2


    2 Tbsp Olive oil
    5 Roma tomatoes
    4-5 cloves garlic
    1/4 cup chopped onion
    1/8 cup banana peppers
    8 oz chicken, cubed
    3 oz of brown rice pasta

    Spices (adjust to taste)

    1 ½ Tbsp basil
    1 Tbsp garlic powder
    1 Tbsp oregano
    ½ tsp Mrs. Dash
    ¼ tsp Salt


1. Cook the chicken in the olive oil and oregano until the pieces are white
2. Toss the onion and garlic in the food processor, and add the processed pieces
3. Add 4 Roma tomatoes diced, and add one that has been processed to liquid consistency
4. Cook this mixture over medium heat for about 10min, or until it gets sauce-like
5. Add spices and banana peppers and simmer over low heat for another 5-10 minutes. This can also be left with a lid for up to twenty minutes if needed
6. Cook the pasta as directed, be careful not to overcook
7. Add the cooked pasta to the sauce, mix to coat the pasta well, and bring the heat up to medium and cook for 2-3 minutes
8. Serve alone (for casein-free) or topped with parmesan or mozzarella cheese
