Introduction

This recipe is done completely in the microwave and is super quick to prepare. It is a really hearty meal. I serve it over mashed potatoes or rice with a nice vegetable salad on the side. This recipe is done completely in the microwave and is super quick to prepare. It is a really hearty meal. I serve it over mashed potatoes or rice with a nice vegetable salad on the side.
Number of Servings: 4

Ingredients

    1 lb Ground Beef 93% lean
    1-8 oz package of light cream cheese
    1-10 1/2-ounce can of Campbells Cream of Chicken soup (98% fat free)
    1-8 oz can of corn
    Pepper to taste

Directions

1.) In a large glass 9" pan, brown meat, uncovered, in Microwave for 4 minutes. Stir occasionally to break up meat chunks.
2.) Drain excess fat
3.) Add remaining ingredients to meat mixture.
4.) Heat in microwave for 2 minutes. Stir to combine.
5.) Heat for an additional 7 minutes and serve over mashed potatoes or rice.
