Introduction

Altered from the cookbook. I didn't have blueberries (should be 1 cup) so I added whatever strawberries I had on hand. Didn't have low fat yogurt (should be 1/2 cup) so I used regular strawberry yogurt. Everything else is the same as in the book. Altered from the cookbook. Ingredients

    *Quaker Oats - Quick 1 Minute - Dry, 1 cup (remove)
    *Flour, white, 1 cup (remove)
    Oat Bran, .5 cup (remove)
    Granulated Sugar, .5 cup (remove)
    Coconut, sweetened, .33 cup (remove)
    Baking Powder, 1 tsp (remove)
    Cinnamon, ground, 1 tsp (remove)
    Baking Soda, .5 tsp (remove)
    Salt, .5 tsp (remove)
    Banana, fresh, 1 cup, mashed (remove)
    Astro Smooth 'n Fruity Yogourt (100g), 1.5 serving (remove)
    Butter, unsalted, 3 tbsp (remove)
    Egg, fresh, 1 large (remove)
    Vanilla Extract, 1 tbsp (remove)
    Strawberries, fresh, .5 cup, sliced (remove)

Directions

- mix dry
- whisk wet
- add wet to dry just until moist
- fold in berries
- put paper muffin cups in the muffin tin and divide the batter by 12 in the tins (I use an ice cream scoop for even size muffins).
- bake 375F about 20 minutes or until toothpick comes out clean
