Chicken and Creamy mushroom sauce

Introduction

Number of Servings: 4

Ingredients

    2 tsp canola lite butter, 1 tbs canola oil, 4 x 120 g chicken breast fillets, flattened with a meal mallet (try schnitzel) , 2 shallots finely chopped, 400g button mushrooms thinly sliced, 100g flour, pinch of garlic salt, 1 cup chicken stock, 3/4 cup low fat evaporated milk, salt and freshly ground black pepper to taste

Directions

Heat a large non stick frypan and add the canola butter and 1/2 the canola oil. Cook the chicken on each side until cooked. Remove from the pan and keep warm.
Add the remainder of the oil to the pan and cook the shallots stirring for 2 mins. Add the mushrooms and cook for further 4 mins. Sprinkle over the flour and cook for 1 minute.
Stir in the stock and evaporated milk and bring to the boil. Return the chicken to the pan, reduce the heat and simmer for 2-3 minutes. Season with salt and black pepper.
Serve with 1/4 of sour cream on top of each chicken piece. Serve with steamed veges or fresh salad (these need to be added)

  • I made this last night and it was to die for! The flour amount has to be way off because 100g - 3/4 cup - so I messed up the first batch. Added 2T second batch and could have lowered it to 1T. I can't wait to make this again! I only used 2 breasts so lots of sauce left for rice. YUM!! - 6/16/12
