IntroductionA creamy mushroom sauce to serve with chicken A creamy mushroom sauce to serve with chicken
2 tsp canola lite butter, 1 tbs canola oil, 4 x 120 g chicken breast fillets, flattened with a meal mallet (try schnitzel) , 2 shallots finely chopped, 400g button mushrooms thinly sliced, 100g flour, pinch of garlic salt, 1 cup chicken stock, 3/4 cup low fat evaporated milk, salt and freshly ground black pepper to taste
Add the remainder of the oil to the pan and cook the shallots stirring for 2 mins. Add the mushrooms and cook for further 4 mins. Sprinkle over the flour and cook for 1 minute.
Stir in the stock and evaporated milk and bring to the boil. Return the chicken to the pan, reduce the heat and simmer for 2-3 minutes. Season with salt and black pepper.
Serve with 1/4 of sour cream on top of each chicken piece. Serve with steamed veges or fresh salad (these need to be added)
