Tomato, Broccoli & Basil Pasta

Number of Servings: 6

Ingredients

    16 oz box of rigatoni or penne
    2 bunches fresh broccoli, cut into 3/4" florets
    8 ripe plum tomatoes, sedded and chopped
    3/8 cup red wine vinegar
    3/8 cup olive oil
    1 bunch green onions, chopped
    1/2 cup chopped fresh basil
    1 teaspoon salt
    1/4 teaspoon pepper
    3 oz can of bacon bits
    grated parmesan cheese

Directions

cook pasta as directed on box. Add broccoli to boiling water during the last 3 minutes. Drain well. Transfer to a very large bowl. Add all remaining ingredients except cheese and toss with pasta and broccoli. Serve warm, at room temperature, or chilled. Serve with parmesan cheese.

1/2 to 1 pound of cooked, peeled, deveined medium to large shrimp, tossed with 2-4 tablespoons lime juice may be substituted for the bacon bits.
