Hoppin' Lemon Bean Salad

Introduction

This was an experiment I tried for New Year's and it was great. Lemony and light, and also satisfying. This was an experiment I tried for New Year's and it was great. Lemony and light, and also satisfying.
Number of Servings: 4

Ingredients

    1 can wax beans
    1 can dark red kidney beans
    1 can black eyed peas
    2 tbs olive oil
    4 oz lemon juice
    2 tsp dried thyme
    1-2 cloves of crushed or pressed garlic
    2 tsp dried parsely

Directions

Drain the three cans of beans and add into a medium sized mixing bowl. Add the rest of the ingredients into a separate cruet and shake until well mixed. Pour the dressing over the beans and mix well. Let sit for a few hours or overnight to mix the flavor. Be sure to mix it a few times during that time.
