Barley & Rice Pilaf

Ingredients

3/4 cup Pearl barley
3/4 cup Brown rice
1 Tbsp Canola oil
1 cup chopped onions
1 cup chopped celery
3 1/2 cups water
1 Vegetable bouillon cube
1/2 cup grated carrots
1 1/2 cup chopped sweet peppers (any color).
1/4 tsp garlic powder
2 tsp parsley flakes
1 1/2 tsp salt
1/2 tsp pepper
Directions
1. Saute barley and rice in canola oil in a large saucepan for about 8 minutes until starting to get golden brown.
2. Add onions and celery. Saute for 3-4 minutes until celery is tender crisp.
3. Add the next 3 ingredients, bring to a boil, reduce heat and simmer for 40 minutes.
4. Stir in the remaining 5 ingredients, cover and simmer for 20 - 30 minutes until water is absorbed and barley is tender.
