Bonnie's Best Gazpacho

Introduction

All-veg, all raw gazpacho. Great first course to dinner! Great go-to fast food from the fridge! All-veg, all raw gazpacho. Great first course to dinner! Great go-to fast food from the fridge!
Number of Servings: 5

Ingredients

    Cucumber (with peel), 4 cucumber (8-1/4") (remove)
    *V8 spicy hot, 12 oz (remove)
    *365 Organic Diced Tomatoes, 2 cup (remove)
    Celery, raw, 3 stalk, medium (7-1/2" - 8" long) (remove)
    Scallions, raw, 6 medium (4-1/8" long) (remove)
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) (remove) (Or, the same amount of a mix of colors of peppers)
    Olive Oil, 2 1tsp (remove)

Directions

Just dice all the veggies really small, pour in a 28 can of diced tomatoes and the 12 oz can of spicy V8. Mix and give it all a day to come together. Optional: put half in the food processor to make smooth, leave the other half chunky. (Great for pot-lucks post-holidays - stay on your diet while you go out!) Also Optional: dress it up with a fanned avocado on top!)
