Spanish Olive-Cheddar Muffins

Ingredients

    2 cups all purpose flour
    1 Tbsp sugar
    2 tsp baking powder
    1 tsp dry mustard
    1/2 tsp baking soda
    1/2 tsp salt
    1/8 tsp ground red pepper
    1/4 cup Smart Balance 50/50 Blend, unsalted
    1 cup Kraft 2% Mexican 4 cheese blend
    1/2 cup chopped pimento-stuffed green olives, rinsed and drained
    1 cup lowfat buttermilk
    3 Tbsp egg whites, beaten

Directions

Preheat oven to 375. Grease or paper line 12 muffin cups.
Combine flour, sugar, baking powder, mustard, baking soda, salt and red pepper in a large bowl. Cut in butter with pastry blender or fork until mixture resembles fine bread crumbs. sitr in cheese and olives.
Combine buttermilk and beaten egg white in a small bowl until blended. Stir into flour-cheese mixture until moistened. Spoon evenly into prepared muffin cups.
Bake 25-30 minutes or until golden brown and toothpick inserted in centers comes out clean. Immediately remove from pan. Serve warm or cool completely.
