Ingredients

    1 C Chopped Celery
    1 C Chopped Onion
    3 Cloves Minced Garlic
    1 Tbsp Olive Oil
    1 32 oz. Jar low-sodium Vegetable Juice
    4 C low-sodium Chicken broth
    2 C Chopped Carrots
    1/2 C Pearl Barley
    1 lb beef cut into bite size pieces
    1 10 oz bag frozen Mixed Vegetables


Directions

Saute the first 4 ingredients in a large soup pot.
Add the Beef, Chicken Stock, Vegetable Juice, pearl Barley and Carrots. Cook for 1 1/2 hours over low heat. Add the Frozen Mixed Vegetables and cook an additional 30 mins, or until desired doneness.
