Momritz's Roasted Root Veggies with Chickpeas

Introduction

This has quickly become my FAVORITE dinner.
When asparagus is in season add it!
This has quickly become my FAVORITE dinner.

Number of Servings: 8

Ingredients

    2 cups cooked chickpeas
    4 medium sweet potatoes, peeled and cubed
    1 pound red skin potatoes, cleaned and cubed
    4 medium carrots, peeled, chopped bite-size
    2 stalks celery, cleaned and chopped
    1 medium onion, chopped
    4-5 cloves garlice, minced
    salt/pepper to taste

Directions

place all your veggies in roasting pan and top with oil. mix well ( I use my hands)
roast at 350 approx 1 hour stirring about every 20 minutes to keep moist
add chickpeas (and asparagus) and roast again approx 20 minutes
season to taste.
