Introduction

I just eat about 1/4 or half of this for lunch or dinner but it could easily be 6 or 8 side servings. Add some kind of canned bean (rinsed first) to add protein. Ingredients

    Red Ripe Tomatoes, 2 cup, chopped or sliced
    Cucumber (peeled), 1 cup, pared, chopped
    Onions, raw, .25 cup, chopped
    Mangos, .5 cup, sliced
    Yellow Sweet Corn, Canned, 2 cup
    Seeds from 1 red pomegranate
    Olive Oil, 3 tbsp
    Lime Juice, 2 lime yields
    balsamic vinegar, 1 tablespoon
    Dill weed, dried, 1 tbsp
    Pepper, black, .5 tsp
    Salt, 1 tsp

Directions

Dice all the veggies as small as you can. I usually make them the same size as the corn kernels. If you're not good with a knife, don't worry about it, the salad will still taste the same if you chop the ingredients bigger. Mix everything in a big bowl and it's ready to eat.
