Ingredients

    4 (4 ounce) boneless skinless chicken breasts
    12 ounces diet soda (diet coke, coke zero, diet pepsi or diet Dr. Pepper)
    1 Cup Ketchup
    2/3 cup finely diced onion
    2 teaspoons cider vinegar
    1/4 teaspoon hot sauce

Directions

Pound chicken breasts to about a uniform 1/4 thickness (this is optional, it's the only way I'll eat chicken). It's also a nice visual trick; by flattening the chicken it appears that your serving is much larger than it actually is.

Spray a non-stick pan with cooking spray and lightly brown chicken breasts for a few minutes on each side. Again, this step is optional. If you're pressed for time, you do not have to brown the chicken.

Mix the ketchup, soda, vinegar, hot sauce and onions together. Pour over the chicken breasts in the skillet. Bring the chicken and sauce to a boil over medium high heat.

Once boiling, reduce heat to a simmer and cook for 50 minutes, until the chicken is fork-tender.

The sauce will be reduced by about half and will have thickened.

Serve each breast with a quarter of the sauce.

I served with Basmati rice and pan roasted broccoli. Excellent "diet" meal.
