Introduction

This is something I threw together and loved. You can have it with rice, pasta or corn chips. I also add chilli for a kick. You can have this hot or cold. Number of Servings: 4

Ingredients

    1 medium Eggplant
    2 small Onions
    4 whole cloves of Garlic ( I don't peel them)
    Green Peppers (bell peppers), 1 cup, strips
    Chickpeas (garbanzo beans), 1 cup
    Salt and Pepper to taste
    1 cup water

Directions

Put all ingredients into a pot and simmer. I simmer down the ingredients to a thick consistency ( Almost like Salsa).
