Pan-Roasted Broccoli

Introduction

I got this recipe from RecipeZaar.com. It was posted by Roxygirl in Colorado. It's an excellent technique for cooking broccoli. I've only ever boiled broccoli and was used to having very mushy and limp broccoli. Pan roasting it keeps it crisp. I've modified the recipe to serve 2. I got this recipe from RecipeZaar.com. Number of Servings: 2

Ingredients

    3 tablespoons water
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1 tablespoons extra virgin olive oil
    2 1/2 cups broccoli pieces



Directions

Stir together water, salt and pepper in a small bowl until the salt dissolves.

If you haven't already, cut the broccoli into bite-sized pieces. I mainly had florets, no stems).

In a large skillet, heat oil over medium high heat. Add the broccoli stems in a single layer.

Do not stir for about 2 minutes or until they are lightly browned.

Turn all of the broccoli over and brown the other side for another 2 minutes.

Add water mixture, cover skillet with lid, and cook another two minutes.

Uncover and cook until desired doneness.

Add additional water, if necessary.
