This is a delicious recipe, not incredibly healthy, but it's one of my hubby's favorites. It can be made a little leaner by using ground turkey, lower fat cheese, and reduced fat biscuits. Ingredients

93% Lean Ground Beef (1 lb.)
1 can Pillsbury Grands Buttermilk Biscuits
1/2 cup barbecue sauce (your choice - i usually use Curly's)
1/2 cup shredded sharp cheddar
Directions
Preaheat oven to 350.
Brown ground beef in skillet, drain fat & rinse pan.
Return beef to skillet over medium heat and add barbecue sauce. Heat for 1-2 minutes.
In a greased muffin pan, spread biscuits across bottom and up sides of cups. (You may need to stretch the buscuits a little bit.) Spoon beef mixture into cups. Bake in oven for approximately 10 minutes. Add cheese to tops of biscuits. Bake another 2-5 minutes until biscuits are golden and cheese is melted.
