2 slices Whole Grain bread 2 Large eggs 1/4 cup 2% milk 1 tbsp. sugar 1 tsp. pure vanilla extract 1 pat unsalted butter
In a long shallow dish, beat eggs, milk, sugar & vanilla until well incorporated. Place the bread in the egg mixture and allow to soak up all the liquid (turning over once after a couple of minutes). Melt the butter in a large frying pan. Carefully lift out the soaked bread with a wide spatula and fry the soaked bread for approx. 2 minutes per side on Medium/High heat until golden brown. Dust with powdered sugar. Serve with 1 tbsp. of pure maple syrup, if desired (adds 52 calories per serving). May also be topped with 1/2 cup of berries or fruit of your choice.
