An old Weight Watchers recipe, this soup is thick, spicy, and hearty. An old Weight Watchers recipe, this soup is thick, spicy, and hearty.
Number of Servings: 8


    6 cups fat free chicken broth
    2 cans white cannellini beans
    1 head of savoy cabbage, julienned (about 4 cups)
    5 crushed garlic cloves
    2 tsp red pepper flake (or to taste)
    15 raw shrimp (medium, deveined, peeled)
    black pepper to taste


Begin to heat the chicken broth in a large stock pot over medium heat. Add the crushed garlic, red pepper flake, and beans with their canning liquid.

Julienne the cabbage, or slice thinly. Cut out any ribs that are too big or coarse. Add to the soup and stir down into the broth. Reduce heat to medium low and simmer until cabbage is tender.

Add the shrimp, cover, and turn off the heat. Cook the shrimp until pink and tender. Season with black pepper to taste.
