Mamma's Italian Minestrone Soup

Introduction

Ingredients

    4 rashers bacon, remove fat
    1 lge onion, chopped
    4 sticks celery, chopped
    4 carrots, cut in small cubes
    1/4 cabbage, shredded
    1 clove garlic, crushed
    400gm can tomatoes and juice
    1/2 cup pasta, uncooked
    4 cups water
    2 tsps beef stock
    1 tsp oregano (dried)
    salt and grond black pepper

Directions

1. Place bacon, onion, celery, carrots, cabbage and garlic in a pot and cook covered for about 5 minutes on a low heat.

2. Add tomatoes and juice, pasta, water, stock, oregano, salt and pepper.

3. Bring to the boil and simmer for about 30 minutes.

4. Check seasonings and serve.

Yummy with crusty bread.
