Fall Roasted Vegetables

Number of Servings: 6

Ingredients

    4 cups cubed butternut squash
    3 cups cubed red potato
    2 cups baby carrots
    1/2 medium red onion
    2 tbsp olive oil
    1 1/2 tbsp minced garlic
    salt and pepper to taste

Directions

Mix all ingredients together in a 8 x 12 baking dish and toss 30 mins into cooking process.
