Cabbage Hamburger Soup

Ingredients

    1.25 pounds lean ground beef
    1 large head cabbage
    1 large onion
    1 large potato
    2 eggs
    20 saltines
    pepper, salt & seasonings to taste

Directions

Shred cabbage, dice onion, peel & slice potato.
Mix ground beef with eggs and crushed up crackers. In a large stock pot, layer half cabbage meat mixture, cabbage, onion & potato slices. Add anywhere between 2 to 6 cups water depending if you want it soup or more like a caserole. Boil for 1 hour. Serves about 8.
