Mo's Low Sodium Potato Salad

Introduction

Ingredients

    8 medium russet potatoes, peeled, diced, and boiled
    2 large stalks celery, diced
    4 large eggs, boiled, peeled, and diced
    Dash salt
    Dash black pepper
    1/2 cup Hellman's Mayonnaise with Extra Virgin Olive Oil
    1/2 cup sour cream
    4 Tbsp fresh cilantro minced
    1/4 red bell pepper, diced
    1/2 tsp paprika

Directions

Combine all ingredients in a large bowl, setting aside 1 Tbsp cilantro and 1/4 tsp paprika. Mix well. Sprinkle with remaining cilantro and paprika to garnish. Makes 16 1-cup servings.
