Blueberry banana & walnut pancakes

Introduction

Number of Servings: 8

Ingredients

    1 cup (110 g) Wegman's Buttermilk pancake mix
    2/3 cup water (plus extra 1/3 cup to thin as desired)
    1 small banana, chopped
    1 cup frozen blueberries, thawed
    40 g chopped walnuts
    1-2 tsp cinnamon

Directions

Makes 8 pancakes using 1/4 cup batter per pancake.

1. Add cinnamon to dry pancake mix. Then add chopped banana, thawed blueberries, walnuts and finally water. Stir until just blended. If you like your pancakes fluffy, don't add extra water, if you like them thinner, add up to another 2 oz. water. (Might make 1 pancake less if you don't add extra water).

2. Heat griddle over med. high flame until it sizzles when water is sprinkled on it. Pour 1/4 cup of batter and let cook for about 2 minutes, until the edges start to dry and the center bubbles slightly. Flip once and cook another 1 minute or so. Put on a warmed plate in and cover with a towel to keep warm until all are cooked.
