Introduction

I used my boss's recipe and modified it using Coconut flour and adding an extra 1/3 cup of egg beaters. I love her biscotti and this makes it healthier, more fiber. I used my boss's recipe and modified it using Coconut flour and adding an extra 1/3 cup of egg beaters. I love her biscotti and this makes it healthier, more fiber.

Ingredients

    1/4 cup Canola or Olive oil
    3 large eggs
    1 cup sugar
    1-1 1/2 t. anise extract
    1/3 cup egg substitute
    1/3 cup Coconut Flour
    21/2 cup white flour
    1/2 cup ground almonds
    2 t. baking powder
    1/2 t. salt
    zest of one lemon (optional)

Directions

Preheat oven to 350 degrees.
Beat oil, eggs and egg substitute, sugar, anise and zest. Add flour, salt, and ground almonds. (I measured the 1/3 cup coconut flour into 3/4 cup measuring cup adding the white flour to the top measuring 3/4 cup, (so 2 1/2 cup is approximate). Form heavy dough. (mine was sticky, so will increase white flour next time to 1/2)Divide into half and roll into 2 logs, press into 1/2 inch thick. Bake for 20-24 minutes on cookie sheet (I spray w/Pam). She said to COOL them first, but I did not. Cut into 1/2 inch slices and bake 6-10 minutes more on each side. Store in airtight container.
