IntroductionGreat meal for using up fridge contents in the winter when squash and chard are plentiful. Great meal for using up fridge contents in the winter when squash and chard are plentiful.
1 medium or 2 small baked potatoes, in skin
200g winter squash, peeled, seeded, 1/4" slices (equal amount to potatoes)
2 cups swiss chard, deveined and thinly sliced
1/4 cup 2% milk
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1/2 swiss cheese, grated
In a greased 9" pie plate, layer potatoes, then chard, then squash. In a bowl, mix together eggs, milk, cumin, salt, pepper, and cheese. Pour over vegetables.
Bake in 375 F degree oven until eggs are set which is about a half hour. Top should be light golden brown and eggs don't jiggle when you wiggle the pan. Careful not to overcook.
