Introduction

Number of Servings: 4

Ingredients

    1 medium or 2 small baked potatoes, in skin
    200g winter squash, peeled, seeded, 1/4" slices (equal amount to potatoes)
    2 cups swiss chard, deveined and thinly sliced
    4 eggs
    1/4 cup 2% milk
    1/2 tsp ground cumin
    1/2 tsp salt
    1/4 tsp black pepper
    1/2 swiss cheese, grated

Directions

Since potatoes are already cooked, cook squash in the microwave until tender, about 5 to 10 minutes. This could also be made with pre-roasted squash if you have some left over. Slice baked potatoes to 1/4" slices.

In a greased 9" pie plate, layer potatoes, then chard, then squash. In a bowl, mix together eggs, milk, cumin, salt, pepper, and cheese. Pour over vegetables.

Bake in 375 F degree oven until eggs are set which is about a half hour. Top should be light golden brown and eggs don't jiggle when you wiggle the pan. Careful not to overcook.
