Introduction

Yummy winter dish, and great for leftovers too. Freezes & microwaves well. AND you don't need to eat anything else with this.. it is a full meal in one serve! Ingredients

    1 kg ground beef (preferably lean)
    1 brown onion, finely chopped
    2 cloves garlic, crushed or finely chopped
    1-2 tbps olive oil
    1-2 cubes beef or chicken stock
    400gms mixed veggies (frozen or fresh)
    1 can tomatoes (include juice)
    a squirt of Worcestershire sauce
    a large squirt or 2 of tomato sauce
    various herbs (to taste)
    a dash of cinnamon

    4 cups cooked Mashed potato (including kumara)
    50gms grated Edam cheese (can use Parmesan too, so won't need as much)

Directions

Cook up garlic and onion in the olive oil. Then add the ground beef, cooking through until browned.

Add in the herbs, spices and sauces, as well as the tomatoes and juice from the can. Stir well.

Add in the veggies.

Cook thoroughly for around 30-40 minutes (keep stirring every 10 minutes or so).

In the meantime, cook the potatoes and kumara together in a separate pot. Mash when soft enough. Add in dijon mustard, parsley and dill sprinkles.

In a large dish, pour in meat sauce, then top with mashed potato mix. Sprinkle Edam cheese on top.

Bake in mod oven (180C/350F) until cheese has melted and is golden brown (probably around 30 minutes or so).

Serve and enjoy.
