2 tbsp canola oil
Uncle Ben's Instant brown rice, (enough to yield 6 cups)
1/4 cup onion
1/4 cup cilantro
1/2 tsp minced garlic
14.5 oz can of diced tomatoes w/jalapenos
1 tbsp cumin
In a large skillet add canola oil. Saute' rice, onion, cilantro, and garlic until onions are tender. Add water (as directed in rice instructions). When rice is done add diced tomatoes with jalapenos and cumin. Heat an add'l. 5 mins.
