Breakfast Frittata

Ingredients

1 TBS Canola Oil
126 grams (1.5 cups) Shredded Hash Brown Potatoes
4 oz. diced ham
3/4 cup All-Whites substitute
4 whole eggs
1 cup milk
4 oz. reduced fat Feta Cheese
2 TBS Whole Wheat Pastry Flour
1 TBS Cilantro - chopped
dash salt
dash pepper
Mrs. Dash to taste
3/4 cup Salsa
Directions
1.) In a large ovenproof skillet coated with cooking spray, cook and stir the potatoes in oil over medium heat until tender. Stir in ham; heat through.
2.) over medium heat in saucepan combine milk, flour, salt, pepper and cheeses. Cook, stirring constantly until mixture is think and bubbly.
3.) In a small bowl, wisk the egg whites, cilantro, cheese mixture and Mrs. Dash; add to skillet. Cover skillet and cook over low heat for 8-12 minutes or until almost set.
4.) Uncover, place under broiler 6 inches from heat for 3-5 minutes or until effs are set and frittata is golden brown. Cut into wedges
