Italian Chicken Sticks

Introduction

Ingredients

    ¼ C. seasoned bread crumbs
    2 T. grated parmesan cheese
    ½ t. dried thyme
    ½ t. dried basil
    ¼ t. dried oregano
    1/8 t. salt
    1/8 t. garlic powder
    1/8 t. cayenne pepper
    1-1/3 boneless skinless chicken breast halves
    2 T. butter, melted

Directions

Preheat oven to 400°

Cut chicken breasts into 6 lengthwise strips.

In a pie plate or platter, mix the bread crumbs, parmesan, thyme, basil, oregano, salt, garlic powder and cayenne pepper.

Dip chicken in melted butter, then dredge in bread crumbs. Place chicken on a lightly greased baking sheet.

Bake for 20 minutes or until chicken is cooked through.

Serve hot or cold with marinara sauce or with honey mustard.

Yield: 6 servings

    I ended up spritzing mine with I Can't Believe It's Not Butter instead of dipping the strips in butter and used Chili Powder with Lime instead of Cayenne Powder (I was out, sadly). This turned out wonderfully! These can be put on top of a salad and turned into a great meal! - 7/7/09

    Really good and I didn't use butter and used olive oil... and didn't have cayenne pepper so used dried chiptole pepper... so good!! And my picky boyfriend even liked it! Hooray!! - 10/21/09

  • This recipe was absolutely delicious! Made it today for lunch, and my boyfriend and I loved it. I didn't have thyme, oregano or basil, but I substituted a dash of chili powder and a pinch of parsley. Turned out great!
