Number of Servings: 4

Ingredients

    1 can tuna, drained
    1 can white beans, drained and rinsed
    2 stalks celery, cut in chunks
    1 red pepper, cut in chunks
    1/2 cup roasted red peppers, cut in chunks
    2 cups cherry or grape tomatoes, halved

    dressing
    2 tbs walnut oil
    1 tbs dijon mustard
    1 tbs thyme
    juice of one lemon

Directions

Combine all dressing ingredients in a bowl, and whisk til combined.

Add the rest of the ingredients, toss until coated.

serve on a bed of spinach, or water cress or boston lettuce
