Introduction

Number of Servings: 4

Ingredients

    2 cloves garlic
    1/2 onion, diced (~1/2 cup)
    1 red bell pepper, diced (~1 cup)
    1 can black beans (~1.25 cups)
    1 cup brown rice, already cooked
    1 tbsp cilantro
    1/2 tsp cayenne pepper

Directions

Saute garlic and onion in a little water. After onions soften, add red bell pepper and saute a few more minutes. Add black beans, rice, and seasoning and heat thoroughly.

Stores well so make a double batch and use for lunch!
