Chichen and White Bean Soup

Ingredients

    1 Tsp Extra virgin olive oil
    2 Slim leeks, whites and lite green centers only, coarsely chopped
    1/2 large cooking only, coarsely chopped
    1/4 tsp dry sage
    3 cups low-sodium chicken broth
    1 cup water
    1 1/2 cups cooked navy beans
    1 lb chicken breast, grilled and cut into 1" chunks
    8 oz package frozen spinach, thawed

Directions

Heat olive oil in soup pot ir dutch oven. Add leeks and onion. Cook until clear and soft, about 5 minutes. Add sage and cook 2 more minutes. Add broth and water, bring to a boil. Add chicken, beans, and spinach. Continue to cook until all ingredients are uniformly heated.
