Potato Leek Soup

Introduction

Number of Servings: 8

Ingredients

    4 cups vegetable stock
    7 small potatoes, peeled and cubed
    3 leeks (white and light green parts only)
    1 TB olive oil
    basil, thyme, salt, and pepper to taste

Directions

Peel and cube potatoes.
Bring vegetable stock and potatoes to a boil in a large stock pot. Simmer until potatoes are soft (about 10 minutes).
In the meantime, slice leeks. Saute leeks in olive oil until tender (about 6 minutes).
Once potatoes are soft, add half and half and half the leeks to the stock pot. Use a stick blender to cream.
Add remaining leeks and spices to taste. Stir. Soup will be thick and creamy.
Makes 8 one-cup servings.
