Jerk Seitan

Ingredients

    Marinade:
    Onions, raw, .5 medium (2-1/2" dia)
    Garlic, 3 cloves
    Ginger Root, 5 tsp
    Lime Juice, .5 lime yields
    Soy Sauce, 3 tbsp
    Olive Oil, 2 tbsp
    Maple Syrup, 2 tbsp
    Thyme, ground, 1 tbsp
    Allspice, 1 tsp
    Cinnamon, ground, .25 tsp
    Pepper, red or cayenne, .25 tsp
    Nutmeg, ground, 1 tsp

    Seitan:
    seitan, 2 cup
    Onions, raw, 1 cup, sliced
    Green Peppers (bell peppers), 1 cup, strips
    Carrots, raw, 3 medium
    Zucchini, 1 cup, sliced

Directions

Combine ingredients for marinade and blend until slightly chunky.

Mix with seitan only and marinade for approx. 1 hour.

In large skillet, prepare other veggies by sauteeing in broth (or olive oil if prefered)

Add seitan only, reserving marinade, and sautee until browned, adding a bit more liquid to keep from sticking.

Add marinade and cook for 2 min more.

Serve with coconut rice, grilled squash and greens. Yum
